چکیده

In an investigation of the nutrition of various strains of Lactobacillus bulgaricusl an organism was obtained that would not grow on a complex medium containing casein hydrolysate, purines, pyrimidines, vitamins, a yeast extract, and clarified tomato juice. A wide diversity of natural products was tested for their ability to support the growth of L. bulgaricus 09, but only whey or related productsa supported maximal growth of the organism. Fractionation of these milk products led to the isolation of a biologically active crystalline compound which was identified as erotic acid. When erotic acid was added to the basal medium and the tomato juice and yeast extract were omitted, no growth was obtained. Caswell et al. (1) reported that the tomato juice used in their medium for the estimation of vitamin Blz with Lactobacillus lactis Dorner could be replaced by a mixture of fumaric acid and ethyl sodium oxalacetate. With L. bulgaricus 09 this mixture does not support optimal growth of the organism. If citric acid is added in addition to the fumaric acid and ethyl sodium oxalacetate, satisfactory growth is obtained.

Effect of Temperature and pH on Formulating the Kinetic Growth Parameters and Lactic Acid Production of Lactobacillus bulgaricus

Background and Objectives: Lactobacillus delbrueckii ssp bulgaricus is widely used in dairy industries as a starter for yogurt production. This study was designed using response surface methodology (RSM) in 12 batch pH-controlled cultures of Lactobacillus delbrueckii sub-ssp. bulgaricus for determining the effect of temperature and pH on the biomass production of a native strain of L. bulgaricu...

Identification of lactic acid bacteria isolated from traditional drinking yoghurt in tribes of Fars province

Morphological, cultural, physiological and biochemical characteristics were employed to identify lactic acid bacteria (LAB), isolated from drinking yoghurt in different areas in Fars province, Iran. From 18 drinking yoghurt samples a total of 673 LAB positives were determined, in which 117 (17.38%) and 556 (82.62%) were identified as lactic acid cocci and lactic acid bacilli, respectively. Addi...

Amino Acid Biosynthesis and Proteolysis in Lactobacillus Bulgaricus Revisited: A Genomic Comparison

The amino acid biosynthesis and proteolytic system of Lactobacillus bulgaricus (L. bulgaricus) is important for its growth in niche-specific environments, as well as for flavour formation in the food industry. Comparative analyses of 4 completed sequences of the L. bulgaricus strain genome on a genomic scale revealed that genes involved in amino acids synthesis were undergoing reductive evoluti...
